The Highly qualified online/in-person Masterclass, unique in Argentina, is aimed at professionals and/or entrepreneurs who want to start in the field of contemporary Neapolitan pizza.
An intensive day in which the Team School of Pizzaioli will explain step by step the most advanced kneading techniques. You will learn the use of technology and the latest trends to obtain a high quality product that is peculiar in its characteristics. A theoretical/practical course in which the student will experience the entire process from dough to cooking.

TIME AND PROGRAMME
10 h Greeting from the President, the Maestro and the team of the Scuola Pizzaioli.
10:15 h Presentation of the course.
10:30 h Presentation of the ingredients: Flour, Water, Yeast, Salt: Differences between conventional and strong flours.
10:45 h Direct and Indirect Kneading Techniques: Advanced Techniques with 30% Biga pre-kneading, 100% Biga, Poolish, Autolisis Kneading Technique and Contemporary Direct Method.
11 h Demonstration preparation of a pre-dough Biga.
11:15 h Closing demonstration dough with 100% Biga.
11:30 h Closing demonstration dough with Biga to 30%.
11:45 h Demonstration preparation of a pre-dough Poolish.
12 h Closing demonstration dough with the pre-dough Poolish.
13 h Demonstration hand-kneading with the autolysis technique.
13:15 h Demonstration closing in kneading machine with the Autolisis technique.
13:30 h Demonstration of the Contemporary Direct Method in a kneading machine.
13:45 h Preparation of loaves of a certain weight.
LUNCH
14:45 h Presentation of the loaves ready to cook.
15 h Start of baking the buns with different kneading techniques: Management and dynamics of a wood-burning oven in Naples.
15:15 h Presentation of Contemporary Pizzas with different kneading techniques.
15:30 h Tasting of the Contemporary Margherita Pizza.
15:40 h Practice for students of drawing technique and shovel.
16 h Delivery of certificates, greetings from the President and the School team and end of the course.
We supply all the tools, materials and ingredients for kneading. As a gift, a t-shirt and a hat will be given to the School of Pizzaioli.
ONLINE
We recommend you to follow the masterclass and after it continue with the equipment of materials and ingredients necessary to be able to carry out the individual practice.

TEACHING AND CERTIFICATION
Theoretical material: folder with theoretical notes on the topics covered in the Masterclass, Paper Teaching Kit (PDF online); In addition to an International Certificate that accredits the passage for Scuola di Pizzaioli.
PLACE, DAY AND TIME
IN ATTENDANCE: The Masterclass will be held at the Scuola di Pizzaioli located in Reconquista 479, Buenos Aires, Argentina.
ONLINE: The Masterclass Online will be held in a meeting on the Zoom platform. After the lesson, a zoom link will also be provided for a maximum of 7 days where it will be possible to play it.
