This workshop is aimed at any professional and amateur who wants to get closer to the world of pizza romana in a baking pan, which has characteristics increasingly appreciated for its particularity, crunchy consistency, quality and flavor. NO PRIORITY KNOWLEDGE IS REQUIRED.
Taught by the masters Agustín Schiariti of ‘Ipolitina Pizza’ and Antonio Borges of ‘Cut-Pizza to cut’. In the course you will not
only learn the techniques, variants and instructions to know how to make the real Roman pizza on a baking sheet, but it is also an experience in which the origin and cultural aspects of the Roman dish are addressed. You will learn the technique of preparation and dough, the times and ways of rising, the proportions according to production, the most advisable raw materials, the expertise and secrets for making a Roman pizza of excellence.

10:30 h Historical notes of Pizza Romana and of the ingredients: Flour, Water, Yeast, Salt
Differences between conventional and strong Flours.
10:45 h Practical hand kneading: Dough management and dynamics
11:15 h Preparation of loaves of a certain weight with the Cutting Technique
11:30 h Practice of rolling out the pizza and how to place it in the BAKING TRAY
11:45 h Cooking practice: Management and dynamics of an electric oven; How to handle a pre-bake or direct cooking using different toppings.
12:00 h Tasting of Roman pizza accompanied by a drink of your choice
12:30 h Delivery of certificates, greetings from the President and the School team and end of course.
**THE TIME IS INDICATIVE AND MAY VARY DEPENDING ON INDIVIDUAL STUDENT INTERACTIONS AND TIMING IN THE PRODUCTION OF HANDMADE PRODUCTS.
We provide all the tools, the material to follow the course and aprons of the School of Pizzaioli. We will also deliver a drink of your choice for the moment of tasting.
TEACHING AND CERTIFICATION
Teaching kit in PDF format. In addition to an International Certificate that accredits the passage for Scuola di Pizzaioli.
